Hungarian Apple Cake

1.7 kg Apple

125 g cane sugar

1 lemon lemon peel

1 lemon lemon juice

1 teaspoon cinnamon

0.5 teaspoon clove

180 gram butter

80 g sugar

4 egg yolk

250 gram fine flour

1 package baking powder

75 ml milk

Wash the apples, peel them, grate them and pour them into a saucepan.

Add cane sugar, lemon zest and juice, cinnamon and cloves. Mix and simmer until soft.

Mix the soft butter with the sugar and egg yolks until foamy.

Add the flour, baking powder and milk and mix. Don't be alarmed if you find the mass sticky, that's okay!

Grease and flour a 20x30cm baking tray and spoon the dough into it. Smooth it out with a spatula, then spoon the stewed apple over it and smooth it out as well.

Bake in an oven preheated to 185°C for 25 minutes.

Beat the egg whites with the sugar into a stiff foam - it's good if the foam does not flow even when the bowl is turned upside down.

Spoon the egg foam on top of the pre-baked pasta and apple layer. We spread it evenly and draw a pattern in it with a fork.

Dry in an oven at 145°C for 20 minutes, until the top of the foam hardens, but the inside remains soft.

Let the cake cool a little, then cut it into cubes and serve.
