Toscany Bean Soup
1 can Cannellini Beans (or Hummus)
3 plum tomatoes, chopped
4 Tbl Olive Oil
10 cloves garlic
1 Tbl Zaatar
1 Tbl Tomato paste
4 Tbl Chicken Soup powder
Salt
Pepper
Thin soup noodles
Sauté garlic in olive oil for about 5 minutes.
Add tomato, zaatar, tomato paste. Mix well.
Add 8 cups water, soup powder, salt and pepper.
Bring to boil and continue to simmer for 20 minutes.
Take out garlic cloves, mush to a paste and return to soup.
Add Cannellini (or hummus).
Continue to simmer an additional 20 minutes.
Add noodle and continue to simmer soup until noodle are done
