Spicy Carrots
3 large carrots peeled and cut to half inch
3-4 chopped garlic cloves
3 tablespoons oil
1/2 teaspoon sweet paprika
1/4 teaspoon cumin
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon harissa
2-3 tablespoons white vinegar
Handful chopped parsley
put the carrots in a pot, cover with water and cook for 20 minutes and strain.
Sauté the garlic in oil for 1-2 minutes on low heat, then add the rest of ingredients and stir for 1-2 minutes. Add the sliced carrots and mix gently.
Transfer to a container and refrigerate for few hours before serving.
