Citrus Chicken
Baked in a Tagine

8 pieces of thighs and drumsticks

8 small shallots

2 bay leaves

1 tablespoon fresh thyme

6 cloves of garlic, crushed

1 tablespoon crushed fresh ginger

1.5 cups orange juice

rind of 1 orange

rind of 1 lemon

juice of 1 lemon

3 tablespoons of brown sugar

2 tablespoon balsamic vinegar

2 tablespoon of soy sauce

a few flakes of hot pepper

salt

pepper

Bliss potatoes quartered or chickpeas and couscous

 

Combine the marinade ing. place chicken pieces in a baking pan place potatoes on top of chicken pour the marinade over chicken and rub it in chicken and potatoes bake in 400F for 40 min

​

Note:

I like to replace the potatoes with a large can of cooked chickpeas and serve it over couscous
