Corn Salad

Ing for the salad:

4 cups cooked corn kernels

1 medium red onion, diced

1 cup cherry tomatoes, halved

1 cup fresh parsley, chopped

1 small hot pepper, with seed and chopped (optional)

1 avocado cut to bit size pieces

dressing:

2 lemon, juice

2 tablespoon olive oil

1 teaspoon honey

1 teaspoon salt

1 teaspoon pepper

 

Combine salad ingredients

in another bowl combine dressing ingredients

combine and refrigerate for 30 minutes before serving
