Eggplant Slices
2 globe eggplants,
3 large tomatoes
olive oil
feta cheese
farmer cheese (optional)
Parsley, chopped, for decoration

Slice the eggplant to about 3/4" slices.
spread on paper towel, salt and let stand for at least 30 minutes.
Wipe salt away, arrange on a cookie sheet.
Speat a small amount of olive oil on each slice. (may use olive oil spray)
Slice the tomatoes and place a slice of tomato on each slice of eggplant.
Bake for about 20 minutes, remove pan from oven, place a slice of tomato on each slice of eggplant.
Put some feta or feta mixed with farmer cheese and continue to bake for about 15 more minutes.
Spread some parsley
Serve immediately.
