Falafel
1 lb dry (raw) chickpeas
large bunch of parsley
1 large onion, very finely chopped
10 garlic cloves, mashed
1/4 cup water
1.5 tablespoons grounded cumin
2 tablespoon sesame seeds
1.5 tablespoons salt
1 teaspoon baking soda
Soak dry chickpeas in lots of water overnight.
Discard soaking water and place the chickpeas in a food processor. add all other ingredients.
Process till all combine to a dough-like paste.
Spoon small balls (I use a medium-size melon/ice cream scooper)
In deep oil:
Form the patties and fry in heated to 375F. Once they are golden brown, remove with a slotted spoon to a paper towel-lined plate. Fry in small batches.
In an oven:
Bake in 400f oven till golden brown.
In air fryer:
bake at 400f for about 10 minutes, open and shake the air fryer's basket. continue to bake another 4 minutes.

Serve with Tahini for dipping.

Note: Frying in deep oil is the best, but the oven or air fryer does not use any oil.
