Picanha, about 1.5 lb is the best size
Kosher salt
Pre heat oven to 355f
Score fat and rub with coarse salt
Sear in a heavy pan fat side down till crispy
Turn and baste with the rendered fat
Transfer to a roasting pan, and roast in the oven till internal temperature is 155f (about 30 minutes)
Rest for 10-15 and serve.
