Thai Red  Cabbage Salad

w/ Peanuts Dressing

For the Salad:

Strips of cooked chicken breast, 

2 medium-size cucumbers

1/4 lb snow peas (or pea pods)

1/2 cup salty peanuts, crushed

1/2 lb bean sprouts

2 red peppers, sliced to strips

2 cups red cabbage, shredded

1/2 cup green onion, sliced

regular or red lettuce, torn to pieces

For Dressing:

1/3 cup roasted, chopped peanuts

1/2 cup rice vinegar

1/3 cup vegetable oil

1 teaspoon salt

1 teaspoon sugar

3 cloves garlic, crushed

1 tablespoon soy sauce

1/4 teaspoon ground ginger

Combine all dressing ingredients and shake well.

​

Mix the salad ingredients except for the chicken breast and the lettuce. Add the dressing, mix well.

​

to plate:

Place a layer of lettuce on a plate, top with the salad and the chicken strips.

​

​

Note: I like to prepare this salad for a crowed. I line a large, shallow salad bowl with lettuce, top with the salad and the chicken.
