Rice Paprikas
Ricz Paprikas

1 large onion, chopped

6 chicken pieces (any part)*

2 red peppers, narrow strips

1 large tomato, diced

1 teaspoon salt

1 teaspoon pepper

2 teaspoons sweet paprika

1/4 cup vegetable oil

1 cup rice

2 cups water

* I like to remove the skin but it is ok to leave it.

On medium heat, saute onions in the oil until translucent, about 5 minutes.

Arrange the chicken pieces in one layer over the onions, top side up.

Top with the red peppers and tomatoes.

Sprinkle with salt, pepper, and paprika.

After about 5 minutes, turn the chicken top-side down, make sure everything is covered with the spices.

Cover the pan and continue to simmer on low heat for about 25 minutes.

Check every 10 minutes, to make sure there is a little liquid in the pan. Usually, it is not needed but sometimes you may need to add a little bit of water. 

Add 1 cup of rice, 1 teaspoon salt and 2 cups water.

Continue to simmer about 20 minutes till rice is done.
