Nurit's  Spinach and Mushroom Salad

1 lb baby spinach

½ lb mushrooms

¾ cup pine nuts

½ teaspoon tarragon

¼ teaspoon lemon zest

1/8 teaspoon nutmeg

½ cup oil

1½ teaspoon sugar

¼ cup lemon juice

½ teaspoon salt

½ teaspoon pepper

½ teaspoon garlic

 

Bring to boil and simmer for 2 minutes all ingredients except for spinach mushroom and pine nuts.

 

Cool, pour on spinach, add mushrooms and pine nuts.
