2 large onions

7-8 garlic cloves

2-3 pepper (all colors) strips

1 eggplant, cubed

tomatoes, cubed

2 potatoes, cut into large cubes

2-3 carrots, cut into large pieces

2-3 celery sticks

1/2 cup olive oil

2-3 tablespoons tomato paste

In an Instapot (or pressure cooker) Saute onions and garlic.
Add meat, and continue to saute till browns.
Cook for at least 1/2 hour or meat quite soft.
Place in a baking pan.
Arrange around the meat red pepper, eggplant, tomatoes, carrots, and potatoes.
In a saucepan, bring to boil tomato paste mixed in 1 cup water and the soup mix. pour over the meat and vegetables in the baking pan.
Bake in 350f oven for about 1/2 hour.
Add okra, and green beans, and bake for another 1/2 hour.
When done, add parsley and drizzle of olive oil
