Hungarian Yellow Wax Bean

1 pound fresh trimmed yellow wax beans (ends removed and cut into 2-inch pieces)

6 cups water

1 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon sweet Hungarian paprika (plus additional for sprinkling)

1 cup sour cream
Add salt to the water and bring water to a boil, add the yellow wax beans, allowing them to simmer until soft. This will take about 8-10 minutes. Remove from heat and allow the beans to begin cooling in the liquid. Do not drain.
